Lamb and Guinness Shepherd's Pie Recipe Ingredients 1 ½ tbsp. extra virgin olive oil 3 garlic cloves chopped 1 onion, chopped 6 tomatoes, peeled, deseeded and cubed 1 cup carrots, peeled and cubed 1 lb. lamb meat, cubed (small) or ground 1 cup beef stock 1 cup Guinness Beer 2 tbsp. Worcestershire sauce 1 tsp. thyme 1 cup green beans 1 cup peas 1 cup corn 6 potatoes, peeled and cubed 1 stick butter<, cubed ½ cup milk, hot ½ cup shredded Cheddar cheese Directions Heat the oil in a pan over medium heat and cook the garlic, onion and tomatoes until they are tender, 5 to 7 minutes, stirring. Add salt, black pepper and carrots, cook, stirring, until carrots are just tender, 5-7 minutes. Add lamb meat and cook until fully cooked, 6-8 minutes, then pour beef stock, beer and Worcestershire sauce, bring to boil and simmer on low about 8-10 minutes. Add beans, peas and corn and cook 3 minutes more, then remove from heat and transfer to a baking dish. Boil the potatoes until tender, then mash with the butter and milk, season with salt and pepper to taste. Turn oven to medium.
