New Zealand Wapiti Elk
Wapiti is a Native American word for “white rump”, and refers to a hybrid cross between the Roosevelt or American elk (a gift from President Roosevelt to New Zealand) and the New Zealand red deer. The Wapiti X elk thrives in the open grasslands of New Zealand. Similar to Venison (a very close cousin) in flavor and texture, Wapiti X Elk produces a sweeter meat, and larger cuts. As with Venison, you get a surprisingly tender yet superbly lean dark red meat, without any of the toughness or gaminess characteristic to hunted game.  New Zealand Wapiti elk meat has a great beef flavor, but with one fifth of the fat of regular red meat. We source our elk from family owned farm in New Zealand, and all our elk meat is guaranteed free of any growth hormones, steroids or antibiotics.
