Grilled Quail in Fragrant Marinade Recipe Ingredients 4 semi boneless quail 1 tbsp. minced garlic 1 ½ tsp fresh chopped sage 1 ½ tbsp. fresh chopped thyme 1/4 cup olive oil Salt and pepper, to taste Directions Bring your charcoal or gas grill to medium. Combine herbs and garlic in a bowl or large Ziploc bag (should fit all birds at the same time) and toss to coat quail fully with marinade. Let the b birds marinade in the fridge for at least 1 hour (more if you want or have time, overnight is just perfect). Once you’re ready to start grilling, remove the birds from the fridge and let sit at room temperature for 10-15 minutes. Remove from the marinade and set on the grill. Give them a good seasoning with salt and pepper, and place on the grill. Grill for about 5/7 minutes on each side, until golden-brown, and cooked inside. Be vigilant, as overcooked quail is not what we’re going for! If you’re cooking bone-in quail, allow an additional 1-2 minutes of grilling. Let sit for about 5 minutes, then serve with your favorite side. This recipe is found in:
