Our succulent Cervena Venison Strip Loin is just what you needed to add big meat flavor to your diet, without bringing in any unwelcome extra fat or cholesterol. Naturally lean, red deer loin has 1/5 of the fat of regular beef, with less cholesterol and less calories. 
You’ll love the deep rose color, the mild, rich and woodsy taste, and the superb tenderness of red deer loin. Roast whole, or cut into steaks for barbecuing or pan searing. This is a lean but soft cut, so it’s best to cook to medium rare to ensure tenderness.  And add a little oil or butter to develop a nice crust when searing or grilling while you’re at it. Pairs beautifully with sweet fruit glazes or any creamy seasoned sauce.
Unlike regular hunted deer, Cervena is a  type of premium New Zealand deer. The word comes from a play on the words Cervidae (Latin for deer) and venison (originally “to hunt”), and applies (only) to prime New Zealand farmed Red Deer, raised humanely and allowed to freely graze on pristine grass pastures, never given hormones, steroids or animal feeds. The difference is eminently “taste-able”: this free-range, grass-fed 8 Bone Rib Rack, sourced from deer just under 3 years old, is tender, deeply flavorful, mild, never gamey and always delicious.
