Inspired by the wonderfully marbled and flavorsome beef being produced in the east, ranchers in Australia started raising their own gourmet Wagyu. Descendants of the same cattle who are responsible for the world-renowned Kobe beef, their Wagyu cattle are brought up on the wide-open spaces of Australia’s golden pasturelands. Never given any antibiotics, hormones, or additives and finished on a minimum of 300 days of a specialty formulated grain diet, the Wagyu sourced from the Southern Hemisphere rivals all the rich taste and buttery, soft texture of the finest Japanese varieties.
