Very rich, generously marbled, at Marble Score 3, these Short Ribs are also generously marbled with succulent intramuscular fat. No bones means no waste, just melt-in-your mouth, beefy Wagyu beef. Best cooked to medium-rare to melt that beautiful marbling right into the meat, on a hot (but not raging) fire, until you get that luscious brown crust on the outside. Salt and pepper and sauce on the side, or your favorite marinade. Slice against the grain to maximize that tenderness.
