Pair Wagyu beef genetics with the best, most tender cut of the steer, and you have steaks made in meat heaven! Our Darling Downs Wagyu Short Loin steak is beautifully marbled, webbed with creamy fat that makes for luscious flavor and incredibly tender texture. This is rearing for it’s turn on the grill, just a sprinkle of salt and pepper and the best Wagyu Porterhouse, T-Bones and NY Strips are yours for the tasting. 
The prized section of our Wagyu selection, cut from behind the ribs and consisting of the crème de la crème of steaks, our Darling Downs Wagyu Short Loin steak is available either whole or cut to order. 
This means you can get a whole, 20 lbs. uncut Wagyu Beef Short Loin to divide and conquer in to the steaks of your choice, or we’ll cut it for you into hefty T-Bone and succulent Porterhouse steaks, 20 lbs. total. You can pick your steak thickness preference, from ¾ inch steaks to hefty 2-inch steaks.
Cutting details:You have the option of choosing the thickness of your steaks: ¾ inch, 1inch, 1 ¼ inches, 1 ½ inches, 1 ¾ inches, and 2 inches. Keep in mind that because the Darling Downs Wagyu Short Loin steak starts thicker on one end and tapers off at the other, some of the steaks will be larger than others. Cutting exactly is also not possible, so some steaks will be cut a bit thicker or a bit thinner, but we’ll try to keep it as close to what you requested as is possible.  If there are any trimmings left over after the cutting process, of course those will be included as well. 
Australia is one of the largest Wagyu beef producers in the world. We source our Wagyu from the same breeds used to produce Japanese Kobe, raised on mother’s milk, then free grazing on open pastures, and finally finished with a minimum of 300 days on grain to ensure that succulent tenderness.

Storage Information
    - Marked chilled, this product will arrive in a vacuum-sealed bag.
- Unopened, use or freeze within 7 days of receipt. Once you've opened the vacuum-sealed bag, use or freeze within 1 day.
- If frozen, keep in the freezer for up to 6 months. To defrost, thaw overnight in the fridge, then use within 3 days.

              Q:hi, I am looking to buy a whole, uncut short loin. these come from Australia in cryovac I assume? how long a time from being cryovac'd at the packer to being shipped to the end customer, typically? also, how trimmed are the whole short loins when you get them? (I am intend to dry age it so I am hoping there will be a fair amount of fat protection on both loin sides.)
              A:Generally we receive the Short Loins 1-2 months after they are packaged, however they are guaranteed 120+ days freshness. The Short Loins are cut to a tight trim specification so there is little fat on the sides.
