Country-Style Rabbit Stew Recipe

Ingredients

  • 1 whole rabbit, quartered
  • 1 large sweet onion, diced
  • 3 large carrots, diced
  • 4 celery stems, diced
  • 2 tbsp. smoked paprika
  • 1 tbsp. oregano
  • 3 bay leaves
  • 2 cups of red wine
  • 2 cups chicken stock
  • 1/2 cup flour
  • 4 tbsp. olive oil
  • salt and pepper, to taste

Directions

  1. In a large pot, heat the oil on high and the vegetables, add paprika and oregano and cook, stirring, until vegetables are tender.
  2. Season the rabbit with salt and pepper and dredge the rabbit pieces in flour until well coated.
  3. Cook the rabbit in the same pot, but move the vegetables to the side, and add the rabbit to the center. Turning the heat to high, cook until rabbit is golden all over. Turn heat to low, add the wine, stock and bay leaves and continue simmering for 10-15 minutes. Add salt and pepper during cooking as needed/wanted.
